Cheesecake Balls

I was home with my sick little girl again today. We went to the doctor, got 2 prescriptions, directions to use another and to wait a few days and come back. She will hopefully get a good night's sleep tonight and be able to go to school tomorrow. We are both a little bit bored, but she is sluggish and fighting a fever. . . . . so I scrapbooked a little and baked.

I actually started making these Cheesecake Balls at the end of last week. My basic thinking was to make a crustless cheesecake, let it set, ball it up, freeze the balls, then dip them and roll in graham cracker crumbs.

My first mistake, I didn't cook the cheesecake enough. With regular cheesecake you want to take it out of the oven while the middle still jiggles a little bit. I let it set over night, but the next day when I went to scoop, it was still gooey. I tried cooking it for a little longer, but it didn't really help. When I tried to scoop it up and roll it into balls, my hands became a huge mess. I would have loved to take a picture, but Brent wasn't home to take one. Because so much of the cake wasn't fully cooked, I was only able to make about 2 dozen, instead of 3 or 4. The last step was pretty much the same as regular cake balls. I dipped most of them in chocolate and then sprinkled with the graham cracker crumbs. A few, I just dipped in chocolate and a few I didn't dip and just rolled in the crumbs. I tried rolling them in the crumbs after dipping, but the chocolate was coming off.

I took a bite of three for this photo, plus I finished the one with chocolate and graham crackers. Before dinner when I checked my bg level before dinner I was the highest I have been in almost 2 weeks. I was 183, but compensated with a little extra insulin for dinner. When I check at bedtime, before my lantus shot, if I am still high I will also have to do a shot of the fast acting.
Besides not thinking these were tasty enough for all the effort, they weren't chocolate enough for all the extra insulin. There is still over a dozen in the frig, but I think they will be pretty easy to resist. Plus, I won't be adding these to the list of cake balls I make for friends and co-workers. All that being said though, Brent loves them and since he isn't a big sweets guy, if he were to specifically asks for these, I would make them for him.

    How much do your cake balls cost again?? I totally forgot my friend's bachelorette party got changed to this Sunday and would consider ordering some blue balls depending on if I can afford it, LOL! I got my PhotoStory finished, yay!!!
